Smoked Trout Martini

Serves 2
One 8 oz package of Spence Smoked Rainbow trout PBO fillets
3 oz whipped cream cheese
6 oz crème fraiche
2 Granny Smith apples
1 lemon
Caviar (optional)

Place two Martini glasses into refrigerator and chill.

Remove skin from Trout fillets and break into small bite size pieces with hands. Fold whipped cream cheese into container of crème fraiche. Peel and core Granny Smith Apples and cut into small dice.

 

Tortillas

Carefully layer crème fraiche, granny smith apples, then Smoked Trout pieces into martini glass repeating until reaching the top covering with a dollop of crème fraiche. Lightly zest lemon on top and season with fresh cracker pepper. Add small spoon of caviar if desired. Serve with small spoon and baguette crostini’s.
