SALMON QUESADILLAS

oz. Spence Smoked Salmon
3
oz. cream cheese
3
oz. Monterey Jack or Pepper Jack Cheese
1
teaspoon chopped jalapeno peppers (disregard if using Pepper Jack)
4
flour tortillas
1
tablespoon oil
GARNISH:
½
avocado, diced
2
scallions, chopped
Chopped
cilantro
1
teaspoon olive oil
Mix
cream cheese, Monterey Jack and jalapenos until blended. Spread
cheese mixture over tortillas. Top
evenly with Spence Smoked Salmon. Fold
tortillas in half.
Warm
oil in skillet. Add the folded tortillas. Warm until tortillas start to
brown, flip and brown other side.
GARNISH:
Mix
olive oil and lemon juice together and whisk. Add chopped ingredients and
toss. Cut tortillas into wedges, top with avocado mixture. |
