SMOKED SALMON & EGG SALAD TORTILLAS

Serves 3-4

5 hard-boiled eggs
1 red pepper
1 cucumber
1 bunch of spring onions
1 iceberg lettuce
olive oil for frying
salt
sugar
2 tbsp. mayonnaise
1 tbsp. sour cream
freshly ground black pepper
1 packet tortillas
4 oz pack of Spence Smoked Salmon sliced
2 oz alfalfa sprouts
2 oz radish sprouts
 

Peel eggs and slice each one into 8 pieces.  Cut the pepper in half, remove the seeds and cut into 1 inch wide strips.  Peel the cucumber, cut in half lengthwise and scoop out the seeds.  Thinly slice the cucumber and spring onions.  Wash and shred lettuce.

Heat olive oil and quickly sauté the pepper and spring onions.  Season with salt and sugar.

Mix with the mayonnaise, sour cream and a little black pepper.  Stir in egg pieces.

Heat the tortillas briefly in a warm oven.  Fill the warm tortillas with shredded lettuce, the egg salad, salmon slices and sprouts.  Roll up and cut tortillas in half.  Serve warm.
